In the Following you will find some current information on the quality association of waterparks and spas in Europe:
Report from the EWA seminar in Cologne
Many of those responsible for waterparks and spas would like to put their gastronomic outlets on the path from stepchild to profit centre. Generally, the practical transition is somewhat harder than thought. It is often the inadequate planning of the relevant areas, both in a structural and procedural respect, which leads to challenges. This also afflicts the large margins of gastronomic turnover between the individual operators. In a one day seminar in Cologne on April 10, 2013, the EWA with the help of known gastronomy experts, wanted to show what is possible, even under the most adverse conditions, as well as where the current development of the gastronomy landscape in leisure facilities can go.
To broach the topic, Dieter Vatheuer from Prova consulting in Hamm, listed the “basic 101 of waterpark gastronomy“. This starts with kitchen facilities appropriate for peak-load days and a menu corresponding to guests‘ wishes, to thorough calculation of the offers and regular checking of the menu for “tops and flops”, to increase in turnover in respective gastronomies through targeted offer combinations and advertising measures.
Erik Fischer and Jürgen Kolb from Unilever Germany GmbH showed what the possibilities of system gastronomy offer (in connection with the corresponding convenience products), in order to be able to provide attractive meals with minimal effort at off-peak times as well. It was also an important concern for Erik Fischer to make those present aware of sustainable use of goods and the similarly organisation of operational processes.
Under the title of “Restaurant Management”, Stephan Dürholt, company spokesperson for Sodexco Services GmbH Germany, dedicated an introduction to the control instruments which can be implemented within gastronomy outlets, in particular instrument standardisation and accounting and how these can be used to confront known discrepancies between debit and credit. After an excursus on the topic of employee management, he demonstrated which strengths should continue to be pushed in waterpark gastronomy in the future. These lie in particular in “story telling”, tailored for the waterpark, in the gastronomy area as well as the services, the adjustment to generation “C(ommunication)”, who exchange ideas directly as well as indirectly via social networks with their friends and the possibility of becoming a “radical pioneer”, i.e. trying something totally new.
With the Leader’s Club Award, which is awarded annually, the association of the same name tries to bring quality-focused gastronomes to promote innovation in the field. Marketing director Michael Kuriat from the TNC Group in Leipzig showed the direction current trends in the gastronomy scene are heading: from beach clubs to travelling pop-up restaurants, down to kitchen guerrillas without their own eateries. These examples gave those members assembled a good idea of how you can be successful with creativity and courage off the beaten path.
Marcus Rheindorf from Pepsico investigated how waterpark gastronomy can generate more turnover with the classic offers. He explained how with the targeted application of advertising measurements and emotionalising the products, the step can be controlled from need (thirst) to selecting a certain product.
“It does not matter what we do, but how we do it” - for the successful hotelier Bernd Reutemann, the attitude of a company and its employees towards their action is decisive for their own behaviour. He demonstrated how he creates sustainable customer relationships in his hotel with “emotionomics” and the willingness to go one step further than necessary and live: so well that it is no longer important for the customer that he is not always the cheapest offer in the market. The many considerate ideas, recognising healthy common sense in dealing with employees and guests and the enthusiasm with which the speaker presented his position provided an extra motivational push at the end of an inspiring seminar.
